HI VIZ heaven.&lt;br /&gt;I went to my restaurant last night and three customers, (one on his honeymoon dinner !), had brought in HI VIZ tabbards. Not only that, I arrrived at work today and I've been sent this little beauty....&lt;br /&gt;Anyways, in other matters...&lt;br /&gt;Completed my re-viz-ion for my motor cycle theory test on Friday, finished it amongst the pigeons in Liecester Square. I don't think they knew what I was up to. Did you know even a pigeon has to turn into wind to land ?&lt;br /&gt;Currently sat at a keyboard covered in discarded hair and things that have settled between in the qwertys. Looks weird, so best not to look at all.&lt;br /&gt;Played one of my favorite games today... waving at an open top bus tour. I figure the people on board should see at least one famous person when they come to the Big Smoke.&lt;br /&gt;Ha ha ha ha. what a giggle.&lt;br /&gt;So if you're a Sikh you don't have to wear a helmet on a motor cycle, let's hear it for the Sikh's, easy riders !&lt;br /&gt;Up for another blast on the radio, tonight's icon nominee, Sir Tel of the Wogan. Usually   prefer food very spicy.Special Utensils: Usual mode of eating Eritrean food is with fingers; however, silverware is used for other types of food.Food beliefs and rituals: Prefer warm and soothing foods when ill such as chicken or beef soups, hot oat gruel with honey, hot tea, hot milk. No ice or cold drinks.Usual diet: Usual diet consists of "Taita" or "enjera", a type of bread or pancake eaten with a meat or legume sauce or stew walled "Tsebhi" or "zigni." Taita is made mostly from cereal called "Taff"; however a mixture of cereals can be used to make taita. Legumes are an important part of the diet and are largely prepared in the form of stew or wot. Stew usually is very spicy and contains a variety of condiments, including onions, garlic, berbere (hot chili powder with other spices, cardamom, white and black cumin, basil, ginger, etc.).Fruits and vegetables are not commonly eaten, except in some of the larger towns and during the period of religious fasting.Fluids: Generally not enough water is consumed. Most prefer drinks at room temperature. Like to drink coffee and spice tea with cinnamon, cloves, cardamom, and lots of sugar.Food prohibitions: There are considerable numbers of food avoidances that persist among different ethnic, social, occupational, religious, age, and gender groups. Coptic Orthodox Christians and Moslems strictly observed religious taboos that forbid eating meat ofwild animals, wild foul, snakes, wild and domestic pigs, dogs, horses, and shellfish. Coptic Christians do not eat meat or dairy for 200 days of each year. Food prescriptions. Preferences are chicken or beef soups, noodles and pasta, traditional hot oat gruel with honey. Add&lt;br /&gt;the water and bring to a boil.  Cover the pan and cook over moderate&lt;br /&gt;heat for about 45 mins, or until the meat is tender.  Should the&lt;br /&gt;curry dry out too quickly, add another 1/2c water. In a heavy saucepan&lt;br /&gt;sauté the onions in 2 tbsp of the spiced butter.  Cover the pot and cook the&lt;br /&gt;onions over low heat until they are very tender but not browned.&lt;br /&gt;&lt;br /&gt;Add the remaining butter to the pot along with the Berbere sauce, wine, garlic,&lt;br /&gt;cayenne and ginger. Add 1/2 cup of water and mix well.  Bring to a simmer and&lt;br /&gt;add the chicken pieces.  Cook, covered, for 30-40 minutes or until the chicken&lt;br /&gt;is tender, adding more water as necessary to keep the sauce from drying out.&lt;br /&gt;When the chicken is tender, add salt to taste. Then whip in blender, 2 cups of batter at a time, thinning it&lt;br /&gt;with 1/2 - 3/4 cup water.  Batter will be quite thin.&lt;br /&gt;&lt;br /&gt;Cook in non-stick frypan WITHOUT OIL over medium or medium-high heat.&lt;br /&gt;Use 1/2 cup batter per injera for a 12-inchpan or 1/3 cup batter for a 10-inch pan.&lt;br /&gt;Pour batter in heated pan and quickly swirl pan to spread batter as thin as&lt;br /&gt;possible.  Batter should be no thicker than 1/8-inch.  Do not turn over.  Injera&lt;br /&gt;does not easily stick or burn.  It is cooked through when bubbles appear all over&lt;br /&gt;the top.  Lay each injera on a clean towel for a minute or two, then stack in&lt;br /&gt;covered dish to keep warm.  Finished injera will be thicker than a crepe, but&lt;br /&gt;thinner than a pancake.&lt;br /&gt;&lt;br /&gt;To serve, overlap a few injera on a platter and place stews on top (I think most&lt;br /&gt;kinds of spicy bean or veggie stews/curries would be great with this. For Eritrean&lt;br /&gt;food, the spicier the better).  Or lay one injera on each dinner plate, and ladle&lt;br /&gt;stew servings on top.  Give each person three or more injera, rolled up or folded&lt;br /&gt;in quarters, to use for scooping up the stews.&lt;br /&gt;&lt;br /&gt;I calculated that if you make 15 12-inch injeras, each would be about 120&lt;br /&gt;calories, 3% CFF.  For a more authentic injera, add 1/2 cup taff flour (taff is&lt;br /&gt;a kind of millet) and reduce the whole wheat flour to 1/4 cup.&lt;br /&gt;&lt;br /&gt;NOTES:&lt;br /&gt;&lt;br /&gt;Injera, a spongy crepe-like bread (slightly sour), is almost always eaten with&lt;br /&gt;Eritrean stews.  If you've been to an Eritrean restaurant, they probably used&lt;br /&gt;the injera as both plate and utensils.  The injera are layered on a round table&lt;br /&gt;and the stews are piled on top -- then more injera are used to scoop up and eat&lt;br /&gt;the stew.  And of course once the stew is gone the injera underneath it are&lt;br /&gt;suffused with all the yummy juices. Serve warm with Injera.&lt;br /&gt;&lt;br /&gt;"Nekedem Belu"  Please dine with me&lt;br /&gt;Eritrean Profile 1/33 - 10/29/94 (Culture and The Arts) by A. E.&lt;br /&gt;What do a monk, a gourmet, a freedom fighter and an author have in common? Not much, you may say. But then you haven't met Abba (Father) Yissak Ghebreyesus. The 62-year-old academic joined the Capuchins (an order of Fransiscans) at the age of 24 and the EPLF at the age of 43. Perhaps the transition from Franciscan to writer to fighter can best be understood in the context of Abba Yissak's love of his country.&lt;br /&gt;In 1969 from his monastery in Nefasit, Abba Yissak wrote a book called "Neke dem Belu", which roughly translated means, "Please dine with me". The 149-page document is a detailed atlas of Eritrean food, drinks and the home grown ingredients that are used in its cooking. According to the Abba, there are more than 68 national dishes, 13 kinds of vegetables, 29 different fruits, - unique to Eritrea -17 different types of homemade bread and various spices to be found in the country. The Abba also gives detailed information on how to prepare each and every dish, drink and spice and convincingly writes that Eritrea is a gourmet's paradise of natural produce and invention. "It used to worry me very much to hear people, especially young people, say that Eritrea has no dishes of its own, but only those inherited from its colonisers," explains the Abba. "I was chief cook in the monastery and I started to research our national dishes." His pride in the country's heritage led him to scorn both the traditions which "relegated" cooking to "women's work" and the politics which relegated Eritrea to being the poor cousin of bounteous Ethiopia.&lt;br /&gt;Because this was 1974, things were happening outside the monastery that was to have a profound effect on the young gourmet's life. Travelling by bus from Segheneti to Asmara, where the official censor of the new regime was based, Abba Yissak was searched by soldiers determined to halt the spread of "inflammatory" propaganda of the freedom fighters. Seizing the monk's document of Neke dem Belu, the Ethiopian's soldiers gazed suspiciously at the "cryptic message" it contained. "Injera, shiro, ziggni, salt, peper...O" To the soldiers such terms could only be a coded recipe for revolution. Ignoring his protestations of innocence, the soldiers hauled Abba Yissak to prison while official spy catchers worked frantically to decode the message bubbling within Neke dem Belu. Frustrated, they released the suspect and sent him back to his monastery.&lt;br /&gt;On his way back he took with him pamphlets of the EPLF and distributed them all the way to Segheneiti. Ironically the soldiers never searched him again, thinking that a holy man would not sympathise with those who took up arms. In 1975 the word was spread that Abba Yissak was an EPLF messenger and he left Segheneiti to join the field. He couldn't take his precious Neke dem Belu document with him but came back for it two years later after the EPLF liberated Segheneiti. But seeing the famine and devastation widespread in his country, he decided that the time was not right for a celebration of national food. Nevertheless believing what was written could be put into use after independence; he once more started working on his book.&lt;br /&gt;In 1979 disaster struck - the document went missing. While its loss did not cause a major strategic upheaval within the ranks of the EPLF, it was a devastating blow to the Abba - who by this time had written six other books on Eritrea's customs, ancient monuments and history, as well as translating Italian works on these subjects. Despite launching a successful line in beles (cactus fruit) jam and tomato sauce from a makeshift factory in Durfo, Wina and Nakfa, his heart often was on his lost, culinary work. It was not until 1984 that he was reunited with his manuscript, which was found in the dusty depths of the Logistics Office of the EPLF, five years later and several miles away from where he was stationed. Seizing it triumphantly he took it home to amend and edit, adding from the copious notes he had made in the field. Although fried snake and boj-boj , ad hoc features of the fighter menu, do not feature as traditional foods in his newly-published book, swa and Imchek have not been forgotten in Abba Yissak's Neke dem Belu. Their search for answers took them on an voyage of discovery to the Arctic, Southern and Indian Oceans, the Atlantic, the Red Sea, the Sea of Cortez and the Mediterranean.&lt;br /&gt;Explorer Paul Rose led the team of intrepid adventurers, including environmentalist Philippe Cousteau (grandson of Captain Jacques-Yves Cousteau), maritime archaeologist Dr Lucy Blue and marine biologist and oceanographer Tooni Mahto.&lt;br /&gt;The team explores the remote and unexplored Southern Red Sea, (Eritrea, Sudan, Djibouti) teeming with marine life and home to some of the warmest waters on the planet.&lt;br /&gt;The Red Sea is one of the youngest oceans in the world and one of the warmest. The northern region, with its diverse array of marine life, is one of the most visited dive locations on earth while the southern end remains virtually unexplored. It's a global hotspot for marine biology and an important trade route throughout human history, linking the trade goods of India and the Far East with the markets of Egypt and Europe.&lt;br /&gt;Coral is vital to the future of the ocean as it is home to a vast diversity of species. But rising temperatures in the world's seas are causing the death of coral reefs due to a process called bleaching, when corals turn white and die. As the Red Sea water is so warm it is an ideal place to study the impact of heat on coral.&lt;br /&gt;&lt;br /&gt; These corals could hold the key to protecting coral reefs around the world.&lt;br /&gt; This is a scientific reef dive which involves taking specimens of the coral.&lt;br /&gt;It is thought that the coral in Eritrea have adapted new ways to deal with the high amount of sunlight in Eritrean waters. When witnessed at night time using a blue torch with a yellow filter over the face mask the corals can be seen fluorescing.&lt;br /&gt;&lt;br /&gt;Recent research suggests that the Red Sea was one of the first seas encountered by early modern humans. Along the coastline of the Red Sea in Eritrea, signs of the first coastal settlements are evident. እሙናት ደጀን ~~~~~ ከም ሳሕል&lt;br /&gt;ኣለናልኪ ትብልዋ~ ሃገርና ክትወጽእ መሳልል&lt;br /&gt;ቲቪ ራህዋናዶ ክዝክር ~~~~~ ዋላስ በይሉል&lt;br /&gt;ናትኩምሲ ሕሉፍ እዩ ~ ከይነቋስሎ ~ ቀልጢፍና ክንሰግር።&lt;br /&gt;&lt;br /&gt;ጀርመን . .ብዙሕ ምተዛረብና ~ ብዛዕባ ጀርመን ግን ንስከፍ ~ ብነብስኻ ምጅሃር ከይመስል&lt;br /&gt;ክንገድፎ ኢና ~ ዋላ ነቲ "ዓንዲ ማእከል"&lt;br /&gt;ምዃን ትፈልጡ እንዲኹም ምዃንና ~ ሓዳስ ኣዳል።&lt;br /&gt;&lt;br /&gt;ዓዲ እንግሊዝ!
